2014 Cabernet Sauvignon
Knights Valley, Bavarian Lion

The Bavarian Lion Vineyard in Knights Valley is a special place; raised in elevation and on one of the easternmost (warm) edges of Sonoma County – Perfect for growing amazing cabernet. A rich core of blackberry jam is surrounded by dusty, rich tannins. A mouthful of beautiful Cabernet, but don’t take our word for it: “A big, expressive style, with layers of blackberry, red berry, licorice, anise, cedar and mocha flavors. Despite the richness and power the tannins are trim on the finish.” – James Laube, Wine Spectator

The Bavarian Lion Vineyard always showcases vibrant blue/black fruits with a tannin profile that is silky and smooth, yet firm in its youth. Knowing this about the vineyard it is important to showcase the fruit with tannins in proportion to the other flavor components. Choices such as fermentation temperature, pump over timing and intensity, yeast choice, cooperage and toast level, lees stirring and malolactic management all play critical roles in balancing this incredible fruit from one of the warmest and most eastern AVAs in all of Sonoma County.
The 2014 Bavarian Lion Cabernet Sauvignon has a richness and depth that was crafted by the choices from vineyard to bottle. Precision picking timing, exacting extraction, and careful aging for 30 months in 90% new French oak all contribute to this wine’s power and grace. Extra time in barrel helps mold nuanced tannins, aroma development, and greater expression of the wine’s personality.
